How many calories are in skirt steak?

A 3-ounce serving of skirt steak has 174 calories, 77 from fat. Skirt steak — also called beef plate skirt steak, fajita meat and Philadelphia steak — is a boneless cut of beef from the lower part of the brisket. Cut from the beef flank, the skirt steak is the diaphragm muscle (which lies between the abdomen and chest cavity), and it looks like a thick-grained flank steak. It's a long, flat piece of meat that's flavorful, but rather tough.

Properly cooked, skirt steak can be quite tender and delicious. You can pound it flat, marinate briefly, then cook over high heat. The skirt steak also can be quickly grilled; pan-fried; or stuffed, rolled and braised. Skirt steak has become quite fashionable because of the delicious Southwestern dish, fajitas.
